- In a saucepan, combine water, butter, salt, and sugar. Bring to a boil over high heat.
- Reduce heat to medium and gradually add flour, stirring constantly until a smooth dough forms.
- Remove dough to a large bowl and allow to cool 4–5 minutes.
- Add egg and vanilla extract, mixing with a hand mixer until fully incorporated.
- Transfer dough to a piping bag or prepare to spoon into air fryer basket. preheat air fryer to 375°F and lightly spray basket with nonstick oil.
- Pipe or spoon bite-sized portions into the air fryer basket without overcrowding. Brush with a little melted butter if desired.
- Cook for 12–15 minutes until golden brown, adjusting time based on your air fryer model.
- While warm, mix sugar and cinnamon in a shallow bowl. Toss churro bites in cinnamon sugar until evenly coated.
- Serve immediately with chocolate syrup, honey, or Nutella.
