  • 2 tablespoons olive oil divided
  • 4 large boneless skinless chicken breasts ensure they're of even thickness
  • 2 teaspoons paprika adds color and mild flavor
  • 4 tablespoons butter melted
  • 6 cloves garlic minced
  • 1 lemon zest + juice plus additional lemon slices for topping
  • 1 tablespoon fresh thyme use fresh for best flavor
  • 1 teaspoon salt adjust to taste
  • ½ teaspoon freshly ground black pepper adjust to taste

Method
 

  1. Preheat your oven to 400°F. Grease a large baking dish with olive oil.
  2. Place the chicken breasts in the dish and drizzle with 1 tablespoon of olive oil. Season with salt, pepper, and paprika (optional).
  3. In a small bowl, whisk together the remaining 1 tablespoon of olive oil, melted butter, garlic, lemon juice, lemon zest, thyme, salt, and pepper.
  4. Pour the lemon butter mixture over the chicken, ensuring it’s well coated. Place 1-2 lemon slices on top of each chicken breast.
  5. Bake the chicken for 25-35 minutes, or until the internal temperature reaches 160°F. Use a meat thermometer for accuracy.
  6. Allow the chicken to rest for 5 minutes before serving.
