  • 3 large Overripe bananas - Mashed until mostly smooth
  • 2 cups All-purpose flour -Can sub gluten-free 1:1
  • ½ cup Granulated sugar -
  • ½ cup Light brown sugar - Packed
  • 2 large Eggs -Room temperature
  • ½ cup Unsalted butter -Softened
  • ½ cup Buttermilk - Room temp
  • 1 teaspoon Pure vanilla extract -
  • 1 teaspoon Baking soda -
  • 1 teaspoon Baking powder -
  • 1 teaspoon Ground cinnamon - Optional but adds warmth
  • ¼ teaspoon Salt - Enhances flavor

Equipment

  • 1 9-inch round cake pans (Can substitute loaf or bundt pan)
  • 1 Large mixing bowl (For main batter)
  • 1 Electric mixer (Hand or stand mixer)
  • 1 Rubber spatula (For folding batter )

Method
 

  1. oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. Toast walnuts in a dry skillet for about 5 minutes until fragrant; cool and chop.
  2. Mash overripe bananas with a fork until mostly smooth with small chunks. Set aside.
  3. In a large bowl, beat softened butter with granulated and brown sugar until light and fluffy, about 4–5 minutes.
  4. Beat in eggs one at a time, mixing well. Add mashed bananas and vanilla extract; mix until combined (it may look slightly curdled).
