Boursin Chicken

Ingredients
  

  • 2 large chicken breasts halved lengthwise for 4 pieces
  • ½ teaspoon garlic powder for seasoning
  • Salt and black pepper to taste
  • 1 tablespoon olive oil for cooking chicken
  • 1 tablespoon butter unsalted, for cooking chicken and sauce
  • ½ medium onion chopped, for sautéing
  • ¾ cup chicken broth low-sodium optional, for sauce
  • 1 5.2 oz package Boursin Fine Herbs & Garlic cheese (softened for creamy sauce)
  • 1 –2 tablespoons chopped parsley optional, for garnish

Method
 

  1. Slice each chicken breast in half lengthwise to create four even pieces. Season both sides with garlic powder, salt, and pepper.
  2. Heat the olive oil and butter in a large skillet over medium-high heat. Once hot, add the chicken and cook 5–6 minutes per side until fully cooked and golden brown. Transfer the chicken to a plate.
  3. Add the chopped onion to the skillet and sauté for 5 minutes, stirring occasionally, until softened and lightly browned.
  4. Pour in the chicken broth and add the softened Boursin cheese. Stir continuously until the cheese melts and the sauce is smooth.
  5. Simmer the sauce for 5 minutes to thicken slightly. Stir in chopped parsley, if using.
  6. Return the chicken (and any juices from the plate) to the skillet. Let it warm in the sauce for 2–3 minutes until fully coated.
  7. Taste and adjust salt and pepper as needed. Serve immediately while hot, spooning sauce over the chicken.
