Ingredients
  

  • 1 lb lean ground chicken or substitute ground turkey for a leaner option
  • 15 oz canned corn drained (sweet corn preferred)
  • ½ cup red onions diced (medium onion, finely chopped)
  • 10.5 oz condensed cream of chicken soup low-sodium for less salt
  • 2 tablespoon Cajun seasoning adjust to taste for spice level
  • 1 tablespoon onion powder for extra flavor
  • ½ teaspoon sea salt or to taste
  • ½ teaspoon black pepper freshly ground recommended
  • ½ cup mayonnaise for creaminess, can use light mayo
  • 4 large hamburger buns your choice of white or whole wheat
  • 1 cup shredded mozzarella and cheddar cheese blend or use one cheese if preferred

Method
 

  1. Preheat the oven to 400°F (200°C) for toasting the buns.
  2. Place the ground chicken in a large sauté pan over medium-high heat.
  3. Break up the chicken with a spatula and cook until fully browned and no longer pink.
  4. Add the drained corn and diced red onions to the pan. Stir to combine and cook for about 3 minutes until onions soften.
  5. Stir in the cream of chicken soup, Cajun seasoning, onion powder, salt, and pepper. Reduce heat to low and stir until smooth.
  6. Add the mayonnaise and fold it into the mixture until fully incorporated and creamy.
  7. Keep the pan on low heat for 2–3 minutes to allow flavors to meld.
  8. Arrange the hamburger buns cut side up on a baking sheet.
  9. Toast the buns in the oven for 4–5 minutes until lightly golden.
  10. Spoon the chicken mixture onto the bottom halves of the buns.
  11. Sprinkle shredded cheese over the chicken mixture and cover with the top bun.
  12. Serve immediately while warm and enjoy!
