Ingredients
  

  • 1 large head cauliflower - Cut into florets
  • 1 medium yellow onion - Diced
  • 3 cloves garlic -Minced
  • 3 cups vegetable or chicken broth - Enough to cover cauliflower
  • 2 tablespoon olive oil - Or butter
  • ½ cup heavy cream -Or milk optional
  • ½ teaspoon salt - To taste
  • ¼ teaspoon black pepper - Freshly ground
  • 1 teaspoon garlic powder - For roasting
  • ½ teaspoon thyme - Fresh or dried
  • ¼ teaspoon red pepper flakes - Optional
  • 1 leaf bay leaf - Adds flavor while simmering
  • teaspoon nutmeg -Subtle warmth
  • 1 tablespoon lemon juice - Or white wine for brightness
  • Parmesan cheese - For serving

Method
 

  1. Toss ⅓ of the cauliflower florets with olive oil, salt, pepper, and garlic powder. Roast for 25–30 minutes until golden brown.

  2. Sauté onion and garlic in butter or olive oil in a large pot for 5–6 minutes until soft.
  3. Add raw cauliflower, broth, bay leaf, salt, and pepper. Simmer for 15–20
