Chinese Beef and Broccoli

Ingredients
  

  • 1 pound flank steak cut against the grain into thin strips for tenderness
  • 1 tablespoon soy sauce for marinating beef
  • 1 tablespoon dry sherry or substitute dry white/red wine
  • 2 tablespoons high-heat oil such as vegetable or peanut oil
  • 1 small yellow onion halved and thinly sliced
  • 1 tablespoon garlic freshly minced
  • 1 tablespoon ginger freshly minced
  • 4 cups broccoli florets bite-sized pieces, fresh
  • 1 cup bean sprouts fresh
  • cup soy sauce or coconut aminos for paleo option
  • cup low-sodium chicken broth or water for lighter flavor
  • cup brown sugar or sugar alternative for low sugar
  • 1 tablespoon sherry or red wine
  • 1 tablespoon sesame oil toasted for flavor
  • ½ teaspoon black pepper freshly ground
  • 1 ½ tablespoons cornstarch for thickening
  • 1 –2 tablespoons Chinese black bean sauce optional, store-bought or homemade, for extra depth

Method
 

  1. Toss the beef strips with soy sauce and sherry, then let them marinate while preparing the sauce.
  2. Whisk together the sauce ingredients, including cornstarch, until fully dissolved. Set aside.
  3. Heat oil in a wok or large heavy skillet over high heat until shimmering.
  4. Add the beef and stir-fry until lightly browned, about 2 minutes.
  5. Add the sliced onions, garlic, and ginger, and stir-fry for 1 minute until fragrant.
  6. Add the broccoli and cook for 2–3 minutes until crisp-tender, adding more oil if needed.
  7. Stir in the bean sprouts and continue to toss for 30 seconds.
  8. Pour in the prepared sauce and stir constantly for 1–2 minutes until the sauce thickens and coats the vegetables and beef.
  9. Serve immediately over steamed rice or noodles.
