Ingredients
  

For Cinnamon Sugar Swirl:
  • 4 tablespoons butter melted and cooled
  • 6 tablespoons brown sugar packed
  • ½ tablespoon ground cinnamon
For Cream Cheese Icing:
  • 4 tablespoons butter softened
  • 2 ounces cream cheese softened
  • ¾ cup powdered sugar
  • 1 teaspoon vanilla extract
For Pancakes:
  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 2 large eggs
  • 2 ⅓ cups buttermilk
  • ½ teaspoon vanilla extract

Method
 

For Cinnamon Sugar Swirl:
  1. In a small bowl, combine the melted butter, brown sugar, and cinnamon. Stir until fully combined and thickened.
For Cream Cheese Icing:
  1. In another small bowl, whisk together the butter, cream cheese, powdered sugar, and vanilla extract until smooth with no lumps.
For Pancakes:
  1. In a medium bowl, whisk the flour, salt, sugar, and baking powder together.
  2. In a small bowl, whisk the eggs, buttermilk, and vanilla extract. Add this mixture to the dry ingredients and stir until just combined—don’t overmix. There will still be some lumps.
  3. Heat a large pan or griddle over medium heat and grease it with butter or non-stick spray.
  4. Spoon ¼ cup of pancake batter onto the heated pan. Use a plastic bag with a cut corner or a spoon to swirl some of the cinnamon sugar mixture onto the batter.
  5. Once bubbles start to form on the surface of the pancake, flip it using a spatula.
  6. When the pancakes are golden and cooked through, transfer them to a plate and top with the cream cheese icing. Repeat with the remaining batter.
