- Preheat oven to 350°F and grease a 9x5 loaf pan. Dice apples into ¼-inch pieces and set aside. Make cinnamon swirl mixture by combining brown sugar, cinnamon, and melted butter.
- Whisk together flour, baking powder, baking soda, and salt in a bowl until fully combined.
- In another bowl, beat eggs and granulated sugar until light and fluffy. Mix in sour cream, oil, and vanilla extract until smooth.
- Gently fold wet mixture into dry mixture just until combined. Do not overmix. Fold in diced apples evenly.
- Pour half the batter into the loaf pan, spoon half the cinnamon mixture in dollops, and swirl with a butter knife. Add remaining batter, top with remaining cinnamon, and swirl again.
