Ingredients
  

  • 1 pound uncooked spaghetti Classic pasta for carbonara
  • 4 large egg yolks Ensure room temperature for better mixing
  • 1-¼ cups grated Parmesan cheese Divided use a high-quality Parmesan
  • 1 tablespoon olive oil For cooking
  • 8 ounces bacon strips chopped Use thick-cut bacon for extra crispness
  • 1 pound boneless skinless chicken breasts Pounded to ½-inch thickness for even cooking
  • ¾ teaspoon salt Divided to season the chicken and pasta
  • ½ teaspoon pepper Divided for seasoning
  • 5 garlic cloves minced For aromatic flavor
  • Freshly cracked black pepper For serving optional for extra spice

Method
 

  1. Bring a large pot of water to a boil. Cook the pasta according to the package instructions. Reserve 1-½ cups of pasta water before draining the rest. prep
  2. In a small bowl, whisk together the egg yolks and ¾ cup of the grated Parmesan cheese; set aside. prep
  3. Whisk egg mixture
  4. Heat olive oil in a large skillet over medium heat. Add the bacon and cook until crispy, about 7-8 minutes. Remove to a paper towel-lined plate. prep
  5. Season both sides of the chicken breasts with ½ teaspoon salt and ¼ teaspoon pepper. Add the chicken to the skillet with the bacon grease and cook for 4-5 minutes per side or until golden and fully cooked. Remove from the skillet and rest for 5 minutes, then slice into thin strips. prep
  6. In the same skillet, add the minced garlic and cook for 1 minute. Then, pour in the reserved 1-½ cups of pasta water and bring to a simmer. mix
  7. Add the cooked pasta, the remaining ¼ teaspoon salt, and ¼ teaspoon pepper to the skillet. Reduce heat to low and stir in the egg and cheese mixture, tossing the pasta until the sauce thickens. mix
  8. Return the cooked bacon to the skillet and toss everything together until evenly combined. finish
  9. Serve the carbonara in bowls, topping with the sliced chicken and the remaining ½ cup of grated Parmesan cheese. Optionally, top with freshly cracked black pepper. finish
