Ingredients
  

  • 1 large egg For a soft or medium-cooked yolk depending on preference
  • 1 oz 28g feta cheese Use crumbled for easy melting
  • 1 small tortilla or 1 slice of toasted bread For a crunchy base
  • ½ avocado Mash before use for creamy texture
  • Pinch of dried oregano For a Mediterranean herb flavor
  • Pinch of red pepper flakes For a mild kick
  • Olive oil spray Or any cooking oil spray for frying
  • 1 teaspoon lemon juice To add a fresh zing
  • Pickled onions Optional for garnish
  • Chili oil Optional for garnish

Method
 

  1. Spray a small frying pan with oil and crumble the feta cheese into the pan, covering the edges.
  2. Heat over medium, allowing the cheese to sizzle and melt, then gently crack the egg in the center.
  3. Season with dried oregano and red pepper flakes. Cook to your desired egg doneness.
  4. Warm the tortilla on the stove, in the oven, or microwave.
  5. Mash the avocado and spread it over the warmed tortilla. Squeeze lemon juice over it.
  6. Once the egg is cooked and the feta has formed a golden crust, carefully lift the egg from the pan with a spatula. Place it on the tortilla.
  7. Garnish with pickled onions and drizzle with chili oil for an extra kick.
