- Spray a small frying pan with oil and crumble the feta cheese into the pan, covering the edges.
- Heat over medium, allowing the cheese to sizzle and melt, then gently crack the egg in the center.
- Season with dried oregano and red pepper flakes. Cook to your desired egg doneness.
- Warm the tortilla on the stove, in the oven, or microwave.
- Mash the avocado and spread it over the warmed tortilla. Squeeze lemon juice over it.
- Once the egg is cooked and the feta has formed a golden crust, carefully lift the egg from the pan with a spatula. Place it on the tortilla.
- Garnish with pickled onions and drizzle with chili oil for an extra kick.
