Ingredients
  

  • 3 large boneless skinless chicken breasts about 1.5 to 2 pounds
  • 1 sweet onion sliced thin into half-moon shapes adds sweetness and flavor during cooking
  • ¼ cup freshly squeezed lemon juice about 2 large lemonsGK for tangy acidity
  • 2 tablespoons extra-virgin olive oil adds richness and flavor
  • 2 tablespoons red wine vinegar adds acidity
  • teaspoons dried oregano classic Greek seasoning
  • 1 teaspoon kosher salt for seasoning
  • ½ teaspoon black pepper for seasoning
For serving:
  • Pita bread soft and warm for wrapping
  • Shredded lettuce iceberg or green leaf for crunch
  • Chopped tomatoes adds freshness and flavor
  • Finely chopped cucumber adds crunch and freshness
  • Tzatziki sauce or dip purchased or homemade for a creamy topping

Method
 

  1. Spray the insert of the crockpot with nonstick cooking spray. Evenly layer the sliced onions into the bottom of the crockpot. Lay the chicken breasts on top.
  2. In a small mixing bowl, whisk together the lemon juice, olive oil, red wine vinegar, oregano, salt, and pepper. Pour this over the chicken, ensuring each piece is coated with the marinade. Use a spatula to scrape out any remaining marinade from the bowl.
  3. Cover with the lid and cook on LOW for 6–7 hours.
  4. Remove the chicken pieces from the crockpot and place them on a plate or cutting board. Use two forks to shred the chicken, then return it to the crockpot and stir to combine.
  5. Warm the pita bread in the microwave. Slather tzatziki sauce onto the pita. Use a slotted spoon to add chicken, then top with shredded lettuce, chopped tomatoes, cucumber, and more tzatziki sauce if desired.
