- Spray the insert of the crockpot with nonstick cooking spray. Evenly layer the sliced onions into the bottom of the crockpot. Lay the chicken breasts on top.
- In a small mixing bowl, whisk together the lemon juice, olive oil, red wine vinegar, oregano, salt, and pepper. Pour this over the chicken, ensuring each piece is coated with the marinade. Use a spatula to scrape out any remaining marinade from the bowl.
- Cover with the lid and cook on LOW for 6–7 hours.
- Remove the chicken pieces from the crockpot and place them on a plate or cutting board. Use two forks to shred the chicken, then return it to the crockpot and stir to combine.
- Warm the pita bread in the microwave. Slather tzatziki sauce onto the pita. Use a slotted spoon to add chicken, then top with shredded lettuce, chopped tomatoes, cucumber, and more tzatziki sauce if desired.
