Ingredients
  

The Dough Base
  • 3 ½ cups all-purpose flour - Or half bread flour for extra structure
  • 2 ¼ teaspoon active dry yeast -- Make sure it’s fresh
  • 1 cup warm milk - About 110°F
  • ¼ cup granulated sugar -
  • 2 large eggs - Room temperature
  • ¼ cup butter - Melted
  • 1 teaspoon salt -
  • 1 teaspoon vanilla extract -For rich flavor
  • 1 tablespoon sour cream - Optional secret ingredient for softness
For Frying
  • 4 cups vegetable oil - For frying; maintain 350°F
  • 1 candy thermometer - To monitor oil temperature
The Glazes
  • 2 cups powdered sugar -
  • 3–4 tbsp milk or cream - Adjust for thickness
  • 1 teaspoon vanilla extract - For vanilla glaze
  • 1 tablespoon cocoa powder - For chocolate glaze
Toppings

Method
 

  1. Warm milk to 110°F, sprinkle yeast and sugar, let sit 5–10 minutes until foamy.
  2. Combine flour, sugar, salt, eggs, melted butter, vanilla, and yeast mixture. Mix until shaggy, knead until smooth.
  3. Place dough in greased bowl, cover with damp towel, and let rise 1–1.5 hours until doubled.
  4. Roll dough ½ inch thick, cut shapes, and place on parchment to rise 30–45 minutes.
  5. Heat oil to 350°F, fry doughnuts 1–2 minutes per side until golden, drain on paper towels.
  6. Dip warm doughnuts in glaze, let drip on rack, and serve within a few hours for best texture.
