- Preheat oven to 350°F Grease a large pizza pan or baking sheet. Press sugar cookie dough evenly across the pan using floured fingers. Bake for 12-15 minutes until lightly golden. Let cool completely on the pan.
- Beat softened cream cheese until smooth. Gradually add powdered sugar, then mix in vanilla extract. Add a splash of heavy cream or milk if needed for spreadability. The mixture should be spreadable but not runny.
- Wash and dry all berries thoroughly. Slice strawberries thin. Peel and slice kiwi. Drain canned fruit and pat dry with paper towels.
- Spread the cream cheese mixture over the cooled cookie, leaving a small border around the edge. Arrange the fruit in circles or random patterns, starting from the outside and working inwards.
- Warm apricot preserves with a little water, then brush lightly over the fruit for shine and to help the fruit stay in place.
