Ingredients
  

  • 1 cup All-purpose flour - For the cookie base
  • ½ cup Butter - For the cookie base
  • 8 oz Cream cheese - Softened
  • 1 cup Powdered sugar -For the cream cheese layer
  • 1 teaspoon Vanilla extract -For flavoring the cream cheese
  • 1-2 tablespoon Heavy cream or milk -To thin the cream cheese layer
  • 2 cups Fresh strawberries -Sliced thin
  • 1 cup Blueberries - Fresh or frozen
  • 2 - Kiwi - Peeled and sliced
  • 1 can Mandarin oranges - Drained and sliced
  • 1 tablespoon Apricot preserves -For glaze optional
  • 2 tablespoon Water - To thin out apricot preservesoptional

  • 1 Large pizza pan or baking sheet (For baking the cookie base)
  • 1 Mixing Bowls (For mixing cream cheese and dough)
  • 1 Electric mixer or whisk (For beating the cream cheese)
  • 1 Rubber spatula (For spreading the cream cheese mixture)
  • Sharp paring knife (For slicing fruit)

Method
 

  1. Preheat oven to 350°F Grease a large pizza pan or baking sheet. Press sugar cookie dough evenly across the pan using floured fingers. Bake for 12-15 minutes until lightly golden. Let cool completely on the pan.
  2. Beat softened cream cheese until smooth. Gradually add powdered sugar, then mix in vanilla extract. Add a splash of heavy cream or milk if needed for spreadability. The mixture should be spreadable but not runny.
  3. Wash and dry all berries thoroughly. Slice strawberries thin. Peel and slice kiwi. Drain canned fruit and pat dry with paper towels.
  4. Spread the cream cheese mixture over the cooled cookie, leaving a small border around the edge. Arrange the fruit in circles or random patterns, starting from the outside and working inwards.
  5. Warm apricot preserves with a little water, then brush lightly over the fruit for shine and to help the fruit stay in place.
