Garlic Bread Grilled Cheese

Ingredients
  

  • 4 slices sandwich bread sourdough with soft crust recommended
  • 4 tablespoon unsalted butter softened
  • 1 tablespoon mayonnaise softened
  • 3 cloves garlic very finely minced
  • 1 tablespoon Italian parsley finely chopped
  • Salt and black pepper to taste
  • 1 cup cheese freshly shredded, mix of Gruyere, Colby Jack, and smoked Cheddar recommended

Method
 

  1. In a small bowl, combine softened butter, mayonnaise, garlic, and parsley. Season with salt and pepper and mix until smooth.
  2. Spread garlic butter on one side of each bread slice. Top one slice with shredded cheese and cover with the second slice, buttered side up.
  3. Heat a non-stick skillet over medium-low heat until warm.
  4. Place sandwich in skillet. Cook slowly, flipping occasionally and gently pressing with a spatula, until both sides are golden brown and the cheese is fully melted (about 4–5 minutes total).
  5. Remove from skillet, slice, and serve immediately while warm and melty.
