Method
 

  1. Preheat your oven to 375°F and prepare two sheet pans by spraying them with non-stick cooking spray.
  2. In a medium bowl, combine the shredded chicken, softened cream cheese, diced green onions (if using), and garlic powder. Stir until everything is well mixed.
  3. Open both tubes of refrigerated crescent rolls and separate the dough into individual triangles. Spoon about 2 tablespoons of the chicken mixture onto the wider end of each triangle.
  4. Fold the sides of the crescent roll over the filling, then roll it up and pinch the edges to seal the chicken mixture inside. Repeat with the remaining dough and filling.
  5. Melt the butter in a microwave-safe bowl for about 40 seconds. Pour the bread crumbs onto a plate for dipping. Dip the top of each chicken pillow into the melted butter, followed by the bread crumbs.
  6. Place the coated chicken pillows onto the prepared sheet pans and bake for 10-15 minutes, or until they are golden brown.
  7. In a small saucepan, combine the cream of chicken soup, milk, and sour cream. Heat over medium heat, stirring occasionally, until warmed through and smooth.
  8. Serve the gravy on the side or pour it directly over the warm chicken pillows.
