Ingredients
  

  • 2 cups frozen peas thawed and drained
  • 1 clove garlic peeled and sliced
  • 1 teaspoon salt plus extra for seasoning
  • 2 large eggs room temperature
  • ½ cup all-purpose flour for binding
  • ½ teaspoon baking powder for fluffiness
  • 1 teaspoon lemon zest optional, for brightness
  • 1 tablespoon fresh mint optional, finely chopped
  • 2 tablespoons olive oil for frying

Method
 

  1. Place half of the peas, garlic, salt, and eggs into a blender or food processor.
  2. Process until smooth and pour into a medium mixing bowl.
  3. Add the flour, baking powder, lemon zest, mint, and a pinch of black pepper, stirring until fully combined.
  4. Fold in the remaining peas gently to add texture.
  5. Heat olive oil in a frying pan over medium heat.
  6. Spoon batter into the pan in small mounds, about heaping tablespoons each, and flatten slightly.
  7. Cook for 3–4 minutes on each side until golden brown and crispy.
  8. Transfer to a plate lined with paper towels to drain excess oil.
  9. Serve warm with your choice of dipping sauce or a squeeze of lemon.
