  • ½ cup Vegetable oil - For roux
  • ½ cup All-purpose flour -For roux
  • 1 large Yellow onion - Diced
  • 1 medium Green bell pepper - Diced
  • 2 stalks Celery - Diced
  • 3 cloves Garlic - Minced
  • 1 lb Andouille sausage -Sliced into rounds
  • 2 lbs Chicken thighs - Bone-in skin-on optional
  • 1 lb Shrimp -Peeled and deveined optional
  • 6 cups Chicken stock -Can substitute vegetable or seafood stock
  • 1 cup Fresh or frozen okra - Sliced
  • 2 leaves Bay leaves -
  • 1-2 teaspoon Cajun seasoning - Adjust to taste
  • 1 teaspoon File powder -Optional for thickening and flavor
  • To taste - Salt
  • To taste - Black pepper
  • ¼ cup Fresh parsley - Chopped for garnish
  • 8 cups Cooked white rice -For serving
  • To taste Hot sauce -For serving
  • 2 stalks Green onions - Chopped optional garnish

Equipment

Method
 

  1. Heat oil, gradually add flour, stir constantly until dark brown.
  2. Add diced onions, celery, bell peppers, cook until soft.
  3. Brown sausage, add chicken thighs, coat with roux.
  4. Pour in stock, add okra and seasonings, simmer for 1.5–2 hours.
  5. Add shrimp or crab towards the end, cook for 5–10 minutes.
