Ingredients
  

The Main Stuff
  • 12 oz Andouille sausage - Sliced
  • 1 lb Chicken thighs - Boneless skinless, cut into chunks
  • ½ lb Raw shrimp - Peeled and deveined
  • 2 cups Long grain white rice - Uncooked
  • 4 cups Chicken broth - Or vegetable broth for vegetarian version
The Base
  • 1 large Yellow onion - Diced
  • 1 medium Bell pepper - Diced any color
  • 2 stalks Celery - Diced
  • 3 cloves Garlic -Minced
The Flavor
  • 2 tablespoon Cajun seasoning - Adjust to taste
  • 2 tablespoon Tomato paste - Deepens color and flavor
  • 2 Bay leaves - Remove before serving
  • 2 tablespoon Hot sauce -1 tablespoon while cooking 1 tablespoon after
  • 2 Green onions - Sliced for garnish
  • 1 tablespoon Butter - Stir in at the end for shine and richness

Equipment

Method
 

  1. Slice and cook the sausage until the edges turn crisp and flavorful.
  2. Sear the chicken pieces until golden brown and slightly caramelized.
  3. Sauté onion, bell pepper, and celery together until soft and aromatic.
  4. Stir in minced garlic and tomato paste to deepen flavor and color.
  5. Add rice to the pot and stir until every grain is coated evenly.
