Mango Slaw

A bright and refreshing mango slaw bursting with citrus, cilantro, and crunch—perfect as a summer side or taco topping.

Ingredients
  

  • 3 cups purple cabbage shredded, or pre-shredded slaw mix with carrots
  • 1 –2 firm mangoes peeled and shredded, chilled before shredding
  • ½ cup cilantro chopped, stems optional
  • ¼ cup red onion thinly sliced, or substitute green onions
  • ½ –1 jalapeno optional, finely minced
  • 1 orange 1 tablespoon zest and ¼ cup juice
  • 1 lime 1 teaspoon zest and 1–2 tablespoons juice, more to taste
  • ½ teaspoon salt adjust to taste

Method
 

  1. Peel and shred the cold, firm mangoes using a grater or slice into thin strips. Place in a large bowl.
  2. Shred or thinly slice the purple cabbage and add it to the bowl with the mango.
  3. Add the chopped cilantro, thinly sliced red onion, and minced jalapeno to the bowl.
  4. Zest the orange and lime, then sprinkle the zest over the mango and cabbage mixture.
  5. If not serving immediately, cover and refrigerate until ready to serve.
  6. Just before serving, pour in the orange juice, lime juice, and sprinkle with salt. Toss thoroughly to combine.
  7. Taste and adjust seasoning, adding extra salt, lime juice, or jalapeno to your preference.
  8. Serve chilled as a side dish, taco topping, or over grain bowls.

Notes

This slaw is best made a little ahead so the flavors meld. Chill briefly before serving for extra refreshment, and adjust lime and spice to suit your taste.
