Ingredients
  

  • 2 ½ cups Pancake mix Complete pancake mix that only requires water
  • 1 ½ cups Water Adjustable depending on mix instructions
  • 1 lb Breakfast sausage Ground pork sausage for flavor
  • 1 ¼ cups Shredded cheddar cheese Adds a sharp, creamy texture
  • 5 Eggs Beaten large eggs
  • ½ cup Maple syrup For that authentic sweet touch
  • ½ teaspoon Salt For balancing the flavors
  • ½ teaspoon Pepper For a slight kick of flavor

Method
 

  1. Preheat your oven to 400°F (200°C) and grease your muffin tin generously.
  2. In a skillet, cook the breakfast sausage over medium heat until browned, breaking it apart as it cooks. Drain excess grease and set aside.
  3. In the same skillet, leaving a little bit of grease, scramble the eggs over medium heat until cooked through, breaking them into small pieces. Set aside.
  4. In a large bowl, combine the pancake mix, water, maple syrup, salt, and pepper. Stir in the cooked sausage, scrambled eggs, and shredded cheese.
  5. Spoon the mixture into the prepared muffin tin, filling each cup with a scant ¼ cup of the mixture.
  6. Bake in the preheated oven for 16-18 minutes, or until the muffins are golden brown and puffed up. Check doneness with a toothpick – it should come out clean.
  7. Allow the muffins to cool in the tin for 5-6 minutes before carefully removing them. Serve with extra maple syrup on the side for dipping.
