Ingredients
  

  • ¼ cup 62.5 g warm water 110-115°F used to activate the yeast
  • 2 and ¼ tsp 7.1 g active dry yeast (for leavening)
  • ¾ cup 193.37 g warm milk at room temperature, helps to activate the yeast
  • 1 large 50 g egg (for binding the dough)
  • ¼ cup 59.97 g unsalted butter softened, adds richness
  • ¼ cup 52.83 g sugar sweetens the dough
  • 1 teaspoon 6.09 g salt balances the sweetness
  • 3 and ¼ cups 429.28 g all-purpose flour (plus an additional ½ cup for kneading)
  • 1 large egg for egg wash
For the Milk-Sugar Mixture
  • ½ cup 105.67 g sugar adds sweetness to the topping
  • ½ cup 67.63 g milk powder enhances the milk flavor

Method
 

  1. Dissolve the yeast in warm water in a small bowl. Let sit for 5 minutes until bubbly.
  2. In a large bowl, combine warm milk, softened butter, egg, sugar, and salt. Stir well.
  3. Add the activated yeast mixture to the bowl and mix. Gradually stir in 3 cups of flour.
  4. Add the remaining flour little by little until the dough forms a ball. You may not need all the flour.
  5. Turn the dough onto a floured surface and knead for 6-10 minutes until smooth and elastic.
  6. Place the dough in a bowl and cover with plastic wrap. Let rise for 1-1.5 hours, or until doubled in size.
  7. Once risen, deflate the dough gently. Divide it into 50-55 equal portions, aiming for 1.5-inch balls.
  8. Shape each portion into a smooth ball and place them closely together in a greased 9x13-inch baking pan. Cover with plastic wrap and let rise for 1 hour.
  9. Preheat oven to 350°F. Mix sugar and milk powder in a bowl.
  10. Beat an egg and brush it onto the tops of the buns. Sprinkle half of the milk-sugar mixture over them.
  11. Bake for 17-20 minutes or until golden brown.
  12. Allow the buns to cool slightly, then sprinkle the remaining milk-sugar mixture over the buns.
