Ingredients
  

For the Crust
  • 1 ½ cups Graham cracker crumbs - Finely crushed
  • 6 tablespoon Unsalted butter - Melted
  • 2 tablespoon Granulated sugar - Adds sweetness
  • 1 pinch Salt - Enhances flavor
For the Peanut Butter Filling
  • 8 oz Cream cheese - Softened to room temp
  • ¾ cup Creamy peanut butter - -Smooth and unsalted preferred
  • 1 cup Powdered sugar - Sifted for creamy texture
  • 1 teaspoon Vanilla extract - Adds aroma
  • ½ cup Heavy cream - Whipped and folded in
  • ¼ cup Mini chocolate chips - Optional – Lucas’s “surprise” mix-in
For the Ganache
  • 1 cup Semi-sweet chocolate chips - Can use dark chocolate if preferred
  • ½ cup Heavy cream - Warmed until just simmering
  • 1 teaspoon Butter - Adds shine and smoothness
Optional Toppings
  • 1 tablespoon Chocolate shavings - For garnish
  • ¼ cup Crushed peanuts -Adds crunch
  • 12 pieces Mini Reese’s cups - Press into center before ganache
  • 1 cup Whipped cream - For topping before serving

Equipment

  • 1 Standard muffin tin (Makes 12 mini pies )
  • 1 Cupcake liners (foil preferred) (Helps release pies easily )
  • 1 Mixing bowl (large) (For crust and filling prep )
  • 1 Electric mixer (To whip filling and cream )
  • 1 Rubber spatula (For folding and smoothing )

Method
 

  1. Mix graham cracker crumbs, melted butter, sugar, and salt until combined. Press into lined muffin cups and freeze for 10–15 minutes.
  2. Beat softened cream cheese until fluffy. Add peanut butter and mix until smooth. Blend in powdered sugar and vanilla.
  3. In a separate bowl, whip heavy cream until stiff peaks form. Gently fold into peanut butter mixture. (
  4. Fold in mini chocolate chips for extra texture.
