Ingredients
  

  • 1 cup old fashioned rolled oats or use oat flour if preferred for smoother texture
  • 1 cup non-dairy milk almond, oat, or other milk alternative
  • 2 large eggs room temperature for easier blending
  • ¼ teaspoon sea salt enhances flavor
  • ¼ teaspoon ground cinnamon optional, for warmth and flavor
  • Non-stick cooking spray to prevent sticking
  • Nutella or preferred spread for filling
  • Fresh fruit or toppings optional, for serving

Method
 

  1. Combine oats, milk, eggs, salt, and cinnamon in a blender. Blend for 45–60 seconds until the batter is completely smooth.
  2. Preheat a non-stick skillet over medium-low heat and lightly coat with cooking spray.
  3. Pour about ½ cup of batter into the skillet and immediately tilt and rotate the pan so the batter forms a thin, even layer across the bottom.
  4. Cook the crepe until the edges start to lift and the top is mostly set, about 1–2 minutes.
  5. Carefully flip the crepe and cook for an additional 15–20 seconds until fully set.
  6. Transfer the crepe to a plate, fill with Nutella or your preferred spread, fold, and add toppings as desired.
  7. Repeat with remaining batter, lightly coating the skillet between each crepe to prevent sticking.
  8. Serve warm and enjoy immediately.
