Ingredients
  

For the Chicken:
  • lb chicken breasts 3–4 pieces, approx. 1 inch thick
  • 2 tablespoon olive oil for coating chicken
  • 2 garlic cloves minced (fresh for flavor)
  • cup grated Parmesan cheese for crust
  • cup breadcrumbs Italian or plain; add 1 teaspoon Italian seasoning if using plain
  • ½ teaspoon cracked black pepper freshly ground recommended
  • ½ –¾ teaspoon sea salt adjust to taste
For the Potatoes:
  • 2 lb red potatoes cut into bite-sized pieces (quarter small potatoes; larger potatoes into 6–8 pieces)
  • 1 –2 garlic cloves minced (optional for flavor)
  • 2 tablespoon olive oil for roasting
  • 2 tablespoon grated Parmesan cheese for crispiness
  • Salt and pepper to taste
For the Green Beans:
  • 1 lb fresh green beans trimmed (ends removed)
  • 1 tablespoon olive oil for coating
  • 1 garlic clove minced (optional)
  • 1 tablespoon Parmesan cheese optional, for topping
  • Salt and pepper to taste

Method
 

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it.
  2. In a medium bowl, combine potatoes, olive oil, minced garlic, Parmesan, salt, and pepper. Toss until evenly coated.
  3. Spread the potatoes on one-third of the baking sheet and roast in the oven for 10–15 minutes, until slightly golden.
  4. Meanwhile, toss chicken with olive oil, garlic, Parmesan, breadcrumbs, salt, and pepper in the same bowl until evenly coated.
  5. Remove the baking sheet from the oven, push potatoes slightly aside, and add the chicken to the pan.
  6. Toss green beans with olive oil, garlic, Parmesan (optional), salt, and pepper in a small bowl.
  7. Add green beans to the sheet pan alongside chicken and potatoes. Bake for 25 minutes, or until chicken reaches an internal temperature of 165°F.
  8. For extra crispy potatoes, switch the oven to broil on high for 4–5 minutes, watching carefully to prevent burning.
  9. Remove the sheet pan from the oven and let rest for a few minutes before serving.
