  • 1 can weetened condensed milk - Chilled
  • 1 cup Heavy whipping cream - Very cold
  • ½ cup Passion fruit pulp - Fresh or thawed frozen
  • 2 tablespoon Passion fruit seeds - Optional topping
  • Pinch Fine sea salt - Enhances flavor

Method
 

  1. Chill mixing bowl and beaters in freezer for 10 minutes. Prepare serving cups.
    Fresh passion fruits cut open beside a sieve filled with bright orange passion fruit pulp and seeds, with a spoon resting in the strainer.
  2. Pour cold heavy cream into chilled bowl. Beat on medium until soft peaks form (2–3 minutes).
  3. Add chilled sweetened condensed milk gradually while mixer runs on low.
    A whisk lifted above a bowl of thick, smooth yellow batter, with the mixture dripping slowly back into the bowl.
  4. Add passion fruit pulp and mix just until color is uniform.
  5. Fold gently with a spatula to maintain light, airy mousse texture.
