Ingredients
  

  • 20 oz Cheese tortellini - Fresh or frozen; cook per package
  • 1 lb Steakribeye, sirloin, or flank - Thinly sliced against the grain
  • 1 tablespoon Olive or vegetable oil - For searing steak
  • 1 teaspoon Kosher salt - to taste Divide
  • ½ teaspoon Black pepper - Freshly ground
  • 1 Green bell pepper - 1" strips
  • 1 Red bell pepper - 1" strips
  • 1 medium Yellow onion -Sliced
  • 4 oz Cream cheese -Cubed room temp melts faster
  • 1 cup Heavy cream - See swaps if needed
  • ½ cup Beef broth - Low sodium preferred
  • 1 tablespoon Worcestershire sauce -Signature depth
  • 1 teaspoon Garlic powder - Season to taste
  • 1 teaspoon Italian seasoning - Optional
  • 6 slices Provolone cheese -Layer over top to melt
  • 1 cup Pasta cooking water - Reserve; use as needed

Equipment

  • 1 Large skillet (12") (Heavy-bottomed; retains heat for good sear )
  • 1 Large pot (For boiling tortellini )
  • 1 Tongs (Flip/transfer steak easily )
  • 1 Wooden spoon or spatula (For sautéing and stirring )
  • 1 Sharp chef's knife (Thinly slice steak and veggies )

Method
 

  1. Slice steak thin against the grain, pat completely dry, and season with salt and pepper.
  2. Cook tortellini per package, reserve pasta water, drain without rinsing, and set aside.
  3. Heat skillet very hot with oil, sear steak in batches 2 minutes per side, then remove.
  4. Sauté peppers and onions until tender; add garlic for 30 seconds without burning.
  5. Melt in cream cheese, add cream, broth, Worcestershire, and seasonings; simmer to thicken.
