Ingredients
  

Crust
  • 1 ½ cups Graham cracker crumbs -about 10 crackers
  • 6 tablespoon Unsalted butter - melted
  • 2 tablespoon Granulated sugar -
  • 1 pinch Salt - balances flavor
Filling
  • 24 oz Cream cheese - room temperature
  • 1 cup Granulated sugar -
  • ¾ cup Shelled pistachios finely ground
  • ¾ cup Heavy cream
  • 3 large Eggs - room temperature
  • 1 teaspoon Vanilla extract -
  • ¼ teaspoon Almond extract -
  • 1 teaspoon Lemon zest -adds brightnes
Topping
  • ¼ cup Chopped pistachios - garnish
  • ½ cup Whipped cream -for serving
  • 2 tablespoon White chocolate shavings -optional
  • 1 teaspoon Rose water - floral touch
  • 2 tablespoon Pistachio paste - for stronger flavor

Equipment

  • 1 9-inch springform pan (Wrap in foil for water bath)
  • 1 Food processor (To grind pistachios and crush crackers)
  • 1 Hand or stand mixer (Use on low speed for smooth filling)
  • 1 Large roasting pan (Used for water bath)
  • 1 Heavy-duty aluminum foil (Wrap springform base to prevent leaks)

Method
 

  1. to 325°F (163°C). Wrap springform pan with foil to prepare for water bath.
  2. Crush graham crackers into fine crumbs, mix with melted butter, sugar, and salt until texture resembles wet sand. Press firmly into pan and bake 10 minutes. Cool.
    – A bowl of light green pistachio cream or frosting being mixed, topped with chopped pistachios.
  3. on low speed until smooth and lump-free. Add sugar gradually until fluffy.
  4. . Add eggs one at a time on low, just until combined.
  5. Pour over cooled crust.
  6. Place pan in roasting pan, pour hot water halfway up the sides.
