  • ¼ cup Pistachio paste -Or homemade version
  • ¼ cup Granulated sugar -
  • 1 cup Whole milk - Warmed not boiled
  • 1 teaspoon Vanilla extract - Optional
  • 1 cup Heavy whipping cream - Cold
  • 2 Egg whites - Room temperature
  • teaspoon Cream of tartar - Helps stabilize whites
  • 2 tablespoon Powdered sugar -For sweetness
  • 1 teaspoon Unflavored gelatin - Bloomed in cold water
  • 2 tablespoon Cold water - To bloom gelatin
  • White chocolate shavings - For garnish
  • Crushed pistachios - Optional topping
  • Whipped cream - Optional for serving

Method
 

  1. Blend Pistachios: In a food processor, grind pistachios until very fine. Mix with pistachio paste and sugar.
  2. Warm Milk: Heat milk in saucepan over low heat until warm. Stir in pistachio mixture and vanilla until smooth. Cool to room temperature.
  3. Bloom Gelatin: Sprinkle gelatin over cold water. Let sit 5 minutes until spongy, then gently warm until dissolved. Cool before adding.
  4. Whip Cream: Beat cold heavy cream until stiff peaks form. Set aside.
