Ingredients
  

  • 4 cups Day-old cooked rice - old from refrigeratorgrains separated
  • 1 cup Cooked pork - Diced into small cubes
  • 1 cup Frozen peas and carrots - Thawed slightly
  • 3 Green onions - Chop white and green parts separately
  • 2 cloves Garlic - Minced
  • 1 teaspoon Fresh ginger - Minced
  • 2 tablespoon Vegetable oil -For stir-frying
  • 2 Eggs - Beaten
  • 2 tablespoon Soy sauce -Adjust to taste
  • 1 tablespoon Oyster sauce - Optional for depth of flavor
  • 1 teaspoon Sesame oil - Added at end for aroma
  • ½ teaspoon White pepper - Seasoning

Equipment

  • 1 Large wok or 12-inch skillet (High heat recommended )
  • 1 Metal spatula or wok spatula (For tossing ingredients )
  • 1 Sharp Knife (For chopping pork, garlic, and green onions )
  • 1 Large cutting board (Prep surface )
  • 1 Small prep bowls (For sauces and eggs)

Method
 

  1. Dice the pork, chop green onions, and mince garlic and ginger for cooking.
  2. Preheat wok over high heat and add vegetable oil, swirling to coat the surface.
  3. Pour in beaten eggs, scramble quickly, break into small pieces, and remove.
  4. Add pork to hot wok, toss until heated through, then remove with the eggs.
  5. Stir-fry garlic, ginger, and white parts of green onions until fragrant.
  6. Add peas and carrots and cook for a couple minutes until slightly thawed.
