  • 1 Zucchini -Sliced quarter-inch thick.
  • 1 Yellow Squash -Sliced quarter-inch thick.
  • 3 Tomatoes -Sliced quarter-inch thick or use canned tomatoes drained.
  • 2 Bell Peppers -Sliced quarter-inch thick.
  • 1 Onion -Sliced thin.
  • 3 Garlic Cloves Minced -For added flavor.
  • ¼ Cup Olive Oil -Drizzled over the vegetables.
  • 1 tablespoon Fresh Basil -Chopped or use dried basil.
  • 1 tablespoon Fresh Thyme - Chopped or use dried thyme.
  • 1 tablespoon Dried Herbs -optional; thyme, oregano, or Italian seasoning.
  • 1 tablespoon Salt -To taste.
  • 1 tablespoon Black Pepper -To taste.
  • ½ Cup Tomato Sauce -Spread on the bottom of the dish.
