Ingredients
  

Crust
  • 1 ¼ cups All-purpose flour -
  • ½ cup Unsalted butter - Cold cubed
  • ¼ teaspoon Salt -
  • 1 tablespoon Sugar - Optional
  • 3–4 tbsp Ice water - Add until dough forms
Honey Filling
  • ½ cup Unsalted butter - Melted
  • ¾ cup Heavy cream - Or half-and-half
  • 1 cup Pure honey - Any variety works
  • 3 large Eggs -
  • 2 large Egg yolks -
  • 1 teaspoon Vanilla extract -
  • 1 tablespoon Cornmeal - Adds texture
  • ¼ teaspoon Salt -
Topping
  • 1 tablespoon Honey - For brushing
  • ½ teaspoon Flaky sea salt - To finish

Equipment

  • 1 9-inch pie pan (Glass preferred for even baking)
  • 1 Rolling Pin (Or wine bottle substitute)
  • 1 Mixing Bowls (One for crust, one for filling)
  • 1 Whisk (For smooth custard)
  • 1 Saucepan (To heat honey mixture)

Method
 

  1. In a large bowl, mix flour, salt, and sugar. Cut cold butter into cubes and work into flour until mixture resembles coarse crumbs. Add ice water one tablespoon at a time until dough just comes together.
  2. Roll chilled dough into a 12-inch circle on a floured surface. Fit into a 9-inch pie pan, trim edges, and crimp as desired.
  3. Line crust with parchment paper and fill with pie weights or dried beans. Bake at 375°F (190°C) for 20 minutes.parchment.
  4. In a medium saucepan, combine honey, butter, and heavy cream. Heat gently over medium until butter melts completely.
  5. In a separate bowl, whisk together eggs and yolks until smooth. Slowly pour warm honey mixture into eggs while whisking constantly to avoid curdling.
  6. Stir in vanilla extract, cornmeal, and a pinch of salt. Mix until evenly combined and slightly thickened.
