Ingredients
  

  • 2 large eggs fresh eggs preferred for best texture
  • ¼ teaspoon oregano dried oregano
  • ¼ teaspoon garlic powder for flavor
  • Salt to taste adjust based on preference
  • ½ tablespoon butter divided for cooking
  • ½ cup baby spinach fresh spinach roughly chopped
  • ¼ cup crumbled feta cheese or more if preferred

Method
 

  1. Beat the eggs in a small bowl and mix with oregano, garlic powder, and a pinch of salt.
  2. Melt ¼ tablespoon of butter in a 9-inch nonstick skillet over medium heat. Once melted, add the spinach and sauté for 1-2 minutes, until it wilts. Then transfer the spinach to a small plate and set aside.
  3. Return the skillet to the heat, add the remaining butter, and swirl it around to coat the bottom. Pour the egg mixture into the skillet and cover with a lid. Let it cook for 1-2 minutes, or until the eggs are almost set.
  4. Sprinkle the cooked spinach and crumbled feta on one half of the omelet. Cover again and cook for another 1-2 minutes, until the eggs are fully set and no longer runny. Then fold the omelet in half and slide it onto a plate.
