Ingredients
  

  • 1 ⅛ cups all-purpose flour measured with spoon and leveled
  • 6 tablespoons packed brown sugar fresh and soft
  • cup finely chopped pecans toasted for flavor
  • 7 tablespoons cold unsalted butter cut into small cubes
  • 36 ounces cream cheese fully softened to room temperature
  • 1 ⅛ cups granulated sugar fine white sugar
  • 6 tablespoons packed brown sugar adds depth and moisture
  • cup all-purpose flour divided for structure
  • 2 ½ tablespoons heavy whipping cream room temperature
  • 1 ¾ teaspoons vanilla extract pure vanilla preferred
  • 5 large eggs room temperature and lightly beaten
  • cup milk chocolate chips melted and cooled slightly
  • cup caramel ice cream topping smooth pourable style
  • ½ cup chopped pecans roughly chopped for texture
  • cup milk chocolate chips for ganache topping
  • cup heavy whipping cream heated just to steaming

Method
 

  1. Wrap the outside of a greased springform pan tightly with a double layer of heavy foil to protect it from moisture.
  2. Stir the flour, brown sugar, and chopped pecans together in a small bowl, then cut in the cold butter until the mixture resembles coarse crumbs.
  3. Firmly press the crumb mixture evenly across the bottom of the prepared pan, then place the pan on a baking sheet.
  4. Bake the crust at 325°F until lightly set and fragrant, then transfer to a rack to cool completely.
  5. Beat the cream cheese with both sugars in a large bowl until completely smooth and lump-free.
  6. Blend in most of the flour, followed by the cream and vanilla, mixing just until incorporated.
  7. Slowly add the eggs, mixing on low speed only until combined to avoid overworking the batter.
  8. Transfer about one cup of batter to a separate bowl and fold in the melted chocolate until uniform.
  9. Spread the chocolate batter evenly over the cooled crust.
  10. In another bowl, combine the caramel topping with the remaining flour, then stir in the chopped pecans.
  11. Spoon the caramel-pecan mixture over the chocolate layer in small portions, spacing evenly.
  12. Carefully spread the remaining plain cheesecake batter over the top, smoothing the surface.
  13. Place the springform pan inside a larger roasting pan and pour hot water into the outer pan until it reaches about one inch up the sides.
  14. Bake at 325°F until the center is just barely set and the surface looks matte rather than glossy.
  15. Remove the pan from the water bath, peel away the foil, and let the cheesecake cool briefly on a rack.
  16. Run a knife gently around the edge to loosen the sides, then allow the cheesecake to cool fully before refrigerating overnight.
  17. Place the chocolate chips in a bowl, heat the cream just until steaming, then pour it over the chips and whisk until silky.
  18. Let the ganache cool slightly, then spread it evenly over the chilled cheesecake and sprinkle with pecans.
  19. Refrigerate until the topping firms up, then remove the pan sides and drizzle with caramel if desired before serving.
