Ingredients
  

  • 300 g Chicken Breast Cut into thin strips
  • 110 g Cornflour Increase slightly to coat the chicken well
  • 1 teaspoon Garlic and Ginger Paste Adds flavor to the chicken marinade
  • 1 Egg White Helps coat the chicken
  • 2 Spring Onions Chopped for garnish
  • Vegetable Oil For frying
Chicken Marinade:
  • 2 tablespoon Dark Soy Sauce For a deep umami flavor
  • 1 tablespoon Garlic and Ginger Paste For extra flavor
  • 1 teaspoon Sesame Oil Adds richness
  • 1 teaspoon Sugar For sweetness
  • 1 teaspoon White Pepper For subtle spice
Stir Fry Sauce:
  • 3 tablespoon Dark Soy Sauce For umami depth
  • 4 tablespoon Honey Provides sweetness and stickiness
  • 1 tablespoon Sriracha For heat and spice
  • 2 tablespoon Lemon Juice Balances sweetness with acidity

Method
 

  1. Cut the chicken breast into thin strips.
  2. Combine the chicken with the marinade ingredients in a large bowl and let it sit for at least 10 minutes.
  3. In a separate small bowl, mix the stir fry sauce ingredients and set aside.
  4. Whisk the egg white into the chicken and mix well. Add cornflour and coat each chicken piece thoroughly.
  5. Heat vegetable oil in a wok or frying pan to 180°C. Fry the chicken for 1 to 2 minutes, then fry again for an additional 2 to 3 minutes for extra crispiness.
  6. In a clean pan, heat a tablespoon of oil. Fry the garlic and ginger paste for 5 to 10 seconds. Then add the stir fry sauce ingredients and cook for 30 seconds or until thickened.
  7. Add the crispy chicken to the sauce, mixing well to coat. Sprinkle with chopped spring onions and serve immediately.
