  • 3 cups purple cabbage shredded, or pre-shredded slaw mix with carrots
  • 1 -2 firm mangoes peeled and shredded, chilled before shredding
  • ½ cup cilantro chopped, stems optional
  • ¼ cup red onion thinly sliced, or substitute green onions
  • ½ -1 jalapeno optional, finely minced
  • 1 orange 1 tablespoon zest and ¼ cup juice
  • 1 lime 1 teaspoon zest and 1-2 tablespoons juice, more to taste
  • ½ teaspoon salt adjust to taste

Method
 

  1. Peel and shred the cold, firm mangoes using a grater or slice into thin strips. Place in a large bowl.
  2. Shred or thinly slice the purple cabbage and add it to the bowl with the mango.
  3. Add the chopped cilantro, thinly sliced red onion, and minced jalapeno to the bowl.
  4. Zest the orange and lime, then sprinkle the zest over the mango and cabbage mixture.
